Recipe Name: Tamarind Chutney or Puli Inji (in Tamil)

Ingredients:
- 400 gms tamarind (soaked in 3 glasses of water/ approximately 1 litre)
- 200 gms jaggery
- 200 gms ginger (finely chopped)
- 250 gms green chillies (finely chopped)
- 15-20 curry leaves
- 1 tsp turmeric powder
- 1 tsp mustard seeds
- 3 tbsp coconut oil
- Strain the pulp out of tamarind water and keep it aside.
- Heat coconut oil in a pan.
- Add mustard seeds and allow it to crackle.
- Add green chillies, ginger and curry leaves and saute it till the raw smell of ginger is gone.
- Add turmeric powder and saute it for another one minute.
- Add the tamarind water and jaggery.
- Allow it to boil. Stir the mixture often till the liquid become thick.
- Switch off the stove.
- Serve with dosas.
