Today I would like to share little information about my all-time favourite vegetable - Potato.
Potato is an important food staple in India and many other countries. Potatoes taste good whether mashed, cooked or roasted. Potatoes can be added with many other vegetables in lot of Indian sabzis. It enhances the taste of other veggies like Bhindi (Lady's finger), Baingan (Brinjal), and many more.
When I was a kid, I used to eat only potatoes in vegetables. Potato fry and potato curry with roti and rice both. Since I am raised in a city called Mumbai, India, the staple food there is Vada Pav. It has always been my favourite. Vada Pav is made up of mashed potatoes alongwith a few other ingredients (I will cover the recipe of Vada Pav in my future post).
Potatoes are very nutritious, if eaten properly. Unfortunately, most people eat potatoes in the form of oily French fries or potato chips. A baked potato is a high fiber food that offers significant protection against cardiovascular disease and cancer.
Potatoes are a very good source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid.
Potatoes should be kept in a well-ventilated place. They should be kept in paper, rather than plastic bags. If they are kept in plastic bags, they will form a fungal growth. If they are stored in paper bags and well-ventilated, potatoes can last for weeks.
