Recipe Name: Dal Fry

Ingredients:
- 3/4 cup mixed lentils (chana dal, split udad dal, moong dal, tuvar dal, masoor dal)
- 1 large onion (finely chopped)
- 2 medium tomatoes (finely chopped)
- 2 tbsp ghee
- 1 tsp ginger (grated)
- 1 tsp garlic (finely chopped and crushed)
- 1 tsp cumin seeds
- 1 bay leaf
- 1 piece cinnamon
- 3 green chillies (slit)
- 2 red chillies
- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- a pinch of asafoetida
- 2 tbsp coriander leaves
- Salt to taste
- Pressure cook the lentils in 2 cups of water.
- Heat ghee in a pan.
- Add cumin seeds, bay leaf and cinnamon and saute till the cumin seeds crackle.
- Add onions and stir-fry it till it becomes pink and soft.
- Add ginger, garlic, green chillies and red chillies and saute it till the raw smell of ginger and garlic goes off.
- Add tomatoes.
- Saute till the tomatoes turn soft.
- Add turmeric powder, coriander powder, asafoetida and salt and saute it for a minute.
- Add the cooked dal and cover it with lid and leave it in a medium flame for about 15 minutes till the dal becomes thick.
- Switch off the stove.
- Add coriander leaves.
- Serve hot with chapatis / rotis.
