Recipe Name: Aloo Baingan

Ingredients:
- 6-8 brinjals (sliced)
- 1 large potato (sliced)
- 1/2 tsp turmeric powder
- 3/4 tsp chilli powder
- 1/2 tsp cumin seeds (jeera)
- 1/2 tsp garam masala powder
- 5-6 curry leaves
- 3 tbsp oil
- Salt to taste
- Heat oil in a pan.
- Add jeera and allow it to splutter.
- Add curry leaves and saute for about 10-12 seconds.
- Add brinjal, potato, turmeric powder, chilli powder, garam masala and salt and mix well.
- Cover the lid and allow it to cook for approximately 10-12 minutes while stirring occassionally.
- Switch off the stove.
- Serve hot with dal rice or chapatis.
