Recipe Name: Aloo Methi

Ingredients:
- 3 cups Methi (fenugreek) leaves (washed and finely chopped)
- 2 large potatoes (chopped into cubes)
- 1/4 tsp turmeric powder
- 1/2 tsp cumin seeds
- 2 green chillies (finely chopped)
- 1/4 tsp garam masala (just for smell) optional
- 2 tbsp oil
- Salt to taste
- Heat oil in a pan.
- Add cumin seeds and allow it to crackle.
- Add green chillies and let it fry.
- Add potatoes, turmeric powder and salt. You can add garam masala, if required. It is optional.
- Fry the potatoes for about 5 minutes.
- Add the fenugreek leaves and cook for about another 10 minutes till the water dries up and the leaves are fully cooked.
- Switch off the stove.
- Serve hot with chapatis or phulkas.
